Ingredients: 6 serves
- Quinoa Olive Green Organics 2 cups
- Evaporated milk 2 cans
- Condensed milk 1 can
- Currants 100 gr
- Dry shredded coconut 100 gr
- Cinnamon quilt 1 unit
- Cloves 5 units
- Orange skin 2 units
- Pineapple skin ½ unit
- Strawberries 6 units
Soak currants in rum until they absorb part of the alcohol.
In a tray put the orange and pineapple skins, dried them in the oven at 50 degrees until crisp.
Blend the orange and pineapple skins with the cinnamon and cloves until get a fine powder.
Add Olive Green Organics Quinoa (80% Royal Quinoa, 10% Black Quinoa and 10% Red Quinoa), in 5 cups of boiling water. Cook (aprox 20 min) until the Quinoa is tender. Strain all the liquid and refresh under cold water. Set a side.
In a pot add the condensed and evaporated milk, cook and stir until the mix is thick enough to see the bottom of the pot.
Add the cooked Quinoa to the mix of condensed and evaporated milk with the currants and the shredded coconut.
Serve sprinkling our Orange, pineapple, cinnamon and cloves powder on top and some pieces of strawberries at room temperature.
